HARVEST. RESPECT. AGAVE. TIME.
The process begins in the fields. For more than four generations, skilled hands have worked the land and nurtured the growth of each plant, caring for more than six million agaves for at least seven years, until they reach the precise point of maturity. There are no shortcuts. Harvesting takes place only when the agave is ready, honoring the natural rhythm of the land.

Once harvested, the agave hearts are placed in one of our 24 masonry ovens, lined with volcanic stone. There, they are slow-steamed for 36 hours and then allowed to rest for another 36. This slow process transforms and hydrolyzes the agave's glucose into fermentable sugars, unlocking the aromas that define the tequila's character.

After cooking, the agave hearts are milled to extract their juice. Using traditional techniques, a sweet and expressive juice is obtained, with every fiber of the agave contributing to its complexity. This is a pivotal step, where the work of the fields is transformed into a living raw material.

The juice is transferred to stainless steel vats, where it slowly ferments for four days. Exclusive yeast strains, cultivated in our own laboratory, are used to develop a controlled and complex aromatic profile.

The fermented liquid undergoes a double distillation in stainless steel stills fitted with copper coils. A team of master distillers from the highlands of Arandas, Jalisco leads the process, refining purity, structure, and balance in every drop.

Time works its magic in our cellars, home to more than 60,000 American white oak barrels. Our reposado tequila is aged for a minimum of six months; añejo, for eighteen months; and extra añejo, for three years. Here, the oak complements rather than overpowers, allowing the character of the agave to evolve with patience and depth.
